Bloody Mary with Celery Microgreens

A classic Bloody Mary with tomato juice, vodka, lemon, Worcestershire, and hot sauce, with a celery salt rim. Topped with celery microgreens; alcohol-free version included.

INGREDIENTS

  • 1 tsp - celery salt
  • 1 wedge - lemon for the rim
  • 300 ml - tomato juice (1 1/4 cups)
  • 90 ml - vodka (3 oz)
  • 20 ml - lemon juice (4 tsp)
  • 2 tsp - Worcestershire sauce
  • 4-6 dashes - hot sauce, such as Tabasco
  • ground black pepper, ice
  • 10 g - celery microgreens

STEPS

  1. Run the lemon wedge around the rims of two tall glasses and dip the rims in celery salt. Fill the glasses with ice.
  2. In a pitcher, combine the tomato juice, vodka, lemon juice, Worcestershire, and hot sauce, and add pepper.
  3. Add a handful of ice to the pitcher and stir for 20 seconds, or pour the mix back and forth between two glasses 4-5 times.
  4. Strain into the iced glasses, top with the celery microgreens, and serve right away.

Celery Microgreens in a Bloody Mary

A Bloody Mary is tomato juice, vodka, lemon, Worcestershire sauce, and hot sauce. The classic garnish is a celery stalk: its savory, slightly salty aroma goes well with tomato. Celery microgreens smell just like the stalk, only several times stronger. A few leaves on top put celery in every sip from the first one.

Put the microgreens on the finished drink; you can also chop a few and mix them with the salt for the rim.

About the Ingredients

Celery microgreens: 10 g for two glasses. The leaves are tiny and very fragrant. Parsley microgreens work as a swap.

Tomato juice: thick and unsweetened. Most of the flavor comes from the juice, so taste it on its own first.

Vodka: any neutral vodka. For an alcohol-free version, see the variations.

Worcestershire sauce brings salt and depth. For the rim, celery salt can be swapped for regular salt mixed with ground celery seed.

Technique: Roll, Don’t Shake

Shaken tomato juice foams and turns watery. Bartenders “roll” a Bloody Mary instead: build it in one glass with ice and pour it back and forth into a second glass a few times. The drink chills and mixes while the juice stays thick. At home, stirring everything with ice in a pitcher works fine.

Variations

  • Virgin Mary: skip the vodka, add more lemon and hot sauce.
  • With horseradish: 1 tsp prepared horseradish per glass for extra heat.
  • Bloody Maria: tequila instead of vodka.
  • With cucumber: a slice of fresh cucumber in the glass.

Serving and Storage

Serve right away in a tall glass with ice, with brunch. The mix without ice and vodka can be made ahead and kept in the fridge for up to 2 days; add the microgreens to each glass when serving. How long an open container of microgreens lasts is in our wiki: microgreen shelf life.

Another drink with microgreens: broccoli microgreen smoothie with apple and banana.

CHEF'S TIPS

Taste the mix before pouring: heat and acid are easier to fix in the pitcher than in the glass.

Chill the tomato juice ahead of time so the ice melts slower and the drink doesn't water down.
