Broccoli Microgreen Smoothie with Apple and Banana

A green smoothie with broccoli microgreens, tart apple, frozen banana, and yogurt. It tastes fruity, looks pistachio green, and takes 10 minutes.

INGREDIENTS

  • 30 g - broccoli microgreens
  • 100 ml - cold water
  • 1 tbsp - lime or lemon juice
  • 150 g - green apple (1 medium)
  • 120 g - frozen banana chunks
  • 150 g - plain whole-milk yogurt
  • 1 tsp - honey (optional)

STEPS

  1. Rinse and dry the broccoli microgreens. Set aside a pinch for garnish.
  2. Put the microgreens, water, and lime juice in the blender and blend for 20-30 seconds into a smooth green liquid.
  3. Core the apple and cut it into chunks; leave the peel on.
  4. Add the apple, frozen banana, and yogurt and blend for 40-60 seconds until smooth.
  5. Taste and add honey if you like. If the smoothie is too thick, thin it with 2-3 tbsp water.
  6. Pour into glasses, top with the reserved microgreens, and serve right away.

Broccoli Microgreens in a Smoothie

Green smoothies often taste like grass, and you end up drowning them in banana. Broccoli microgreens are milder than mature broccoli with no bitterness, and the apple and banana cover their light cabbage note. The color comes out pale green, like pistachio ice cream.

30 g of microgreens for two glasses gives a clear green color and freshness while the flavor stays fruity. Want it greener? Add 10 g at a time and taste.

About the Ingredients

Broccoli microgreens: 30 g, about half a standard clamshell. Sunflower or pea microgreens work as a swap and make it nuttier.

Banana: frozen in chunks. It makes the smoothie thick and cold without ice, which waters down the flavor.

Apple: a tart green one like Granny Smith. Leave the peel on; a strong blender will handle it.

Yogurt: plain and unsweetened. For a vegan version, use coconut or soy yogurt.

Technique: Greens and Liquid First

Toss everything in at once and the little leaves wrap around the blade and stay in bits. Blend the microgreens with the water and lime juice for 20-30 seconds until you have a smooth green liquid, then add the rest. That way the smoothie comes out silky even in a regular blender.

Variations

  • With kiwi: one kiwi in place of half the apple, for a tangier taste.
  • With pineapple: 100 g frozen pineapple instead of banana.
  • With oats: 2 tbsp rolled oats for a more filling breakfast.
  • With mint: 5-6 mint leaves along with the microgreens.

Serving and Storage

Drink the smoothie right away: within an hour the apple darkens and the color turns muddy. Add the garnish at the very last moment. How much microgreens it makes sense to eat in a day is covered in our wiki: how many microgreens per day.

Another microgreen smoothie: sunflower microgreen smoothie.

CHEF'S TIPS

Peel and slice bananas before freezing: a whole frozen banana in its peel is hard to peel.

If it tastes too grassy, there are more microgreens than you like: add another half banana.
